At the Garden of Concord all sorts of vegetables are grown and harvested. Some might be familiar to you and some not so well known. Or we might be harvesting a vegetable you recall being forced to eat as a child that… well, left a bad taste in your mouth. For me it was collard greens. I use to come home at least twice a week to the smell of stemmed greens — yuck! It wasn’t until coming to the garden and hearing of new ways to cook these leafy monsters that I’ve come to love collards!

  1. Carrot Cake
    Mix well in large mixing bowl
    1 1/2 cups of corn oil
    2 cups granulated sugar
    4 eggs

    Add-2 cups flour
    2 teaspoon baking powder
    1 teaspoon baking soda
    1 teaspoon salt
    2 teaspoons of cinnamon
    Mix well
    Add 2 cups grated carrots packed down into cup
    1 small can crushed pineapple ( add juice)
    1/2 cup chopped walnuts or 1/2 cup of raisins ( optional)

    Grease 13x9x2 pan and flour bottom and sides
    Bake at 350 degrees

    Cream cheese icing
    1 box powdered sugar
    1/4 cup butter
    1 8oz cream cheese
    1 tsp. Vanilla
    Beat until smooth and enjoy
